Jassa
Jassa is the Senegalese national restitution food. ( also good at any time)
First it has to be noted that Senegal is a muslim country, and I do not know anything about

Jassa is a very tasty and effective restitution food with one handicap:
you have to prepare it in advance. But being a kind of stew, it is even better after it's reheated.
So here is the simple recipe:
chicken
onions
lemmons
very hot African or Thai chillies
Cut the onions in coarse slices, and put them together with the chicken pieces in a pot.
Pour the squeezed lemon juice over it. Mix it all together very well and let it stand
in the fridge for min.
two hours (it's better if you leave it over night, but cover it well,
otherwise your flat will smell like the
base of a street lamp).
Now:
Fire up the grill. Char (blacken slightly) the chicken pieces. Take them off the grill, and cook them in the lemon - onion mixture until they are done (or longer). Don't hurry - let the cooking take its time.
The slower you cook it the sweeter the onions will get. But don't let the onions get too brown.
The trick is when the sweet onions are together with the sour lemons and the hot chillies.
Is your mouth already watering? Serve it with plain rice. Also very good without a hangover.
